The Rochester Institute of Technology now offers a minor in open source that includes both a technical and non-technical track. The minor focuses on things like humanitarian open source development, open source culture, the legal and business environment of FOSS and more. Holding true to the open source mindset, the school encourages students to improve upon the courses they take and assignments are submitted using pull requests.
